Brandon’s World Famous Steel Cut Oat Bake
Ingredients
- 2 cups steel cut oats
- 3 tsp cinnamon
- 1 tsp dry ground ginger or 3 tsp ginger juice or ~1 inch fresh piece grated
- 3 tsp vanilla extract
- 0.5 canned sweet potato puree or pumpkin
- 2 apples chopped
- 4 cups unsweetened/unflavored soy milk or cow’s milk
- (use cows milk for a sweeter taster)
- coconut oil or butter
- 3 bananas
- frozen blueberries
Bowl prep
- Combine oats, spices, pumpkin puree and chopped apples in a bowl and stir
- Add 1 cup of milk to oats, stir
Pan prep
- Generously butter or coconut oil 13”x9” baking pan
- Line bottom of pan with banana slices
- Put oat mixture on top of bananas
- Spread frozen blueberries evenly over oats
- Pour remaining 3 cups of milk on top
- (optional) Store in fridge overnight
- Bake at 350F for 1 hour
- Eat with yogurt and peanut butter. And butter and maple syrup if you’re feeling fancy
Notes
- if you prefer a more moist texture, increase pumpkin to 1 full can
- if you like a richer taste add 2 Tbs melted butter to oats mix
- feel free to experiment with spices, sometimes we add a 1/8tsp of nutmeg or swap some cinnamon for cardamom
